Live Lobster Cooking Instructions

Boil Live Lobster


Fill a large lobster pot with water. Allow three quarts of water per 1.5 pounds of lobster, lobster should be totally submerged in water.


Add 1/4 cup of sea salt for each gallon of water. (4 quarts = 1 gallon). This adds flavor to the lobsters.


Bring the salt water to a rolling boil.


Put your live lobsters in one at a time using gloves or tongs. Do not cover.


Stir the lobsters halfway through boiling. (cooking times are below)


Boiled lobsters will be bright red when done.


Place the boiled lobsters in cool water or let stand for 3-5 minutes before serving.


Lobster Size Boiling Times

1 lb lobster 5-6 minutes

1 ¼ lb lobster 7-8 minutes

1-1/2 lb lobster 8-9 minutes

2 lb lobster 10-12 minutes

3 lb lobster 12-14 minutes

5-6 lb lobster 18-20 minutes


Barbecue Live Lobster:


The process begins similarly to boiling lobster. Fill a large lobster pot with water. Allow three quarts of water per 1.5 pounds of lobster, lobster should be totally submerged in water.


Add 1/4 cup of sea salt for each gallon of water. (4 quarts = 1 gallon). This adds flavor to the lobsters.


Bring the salt water to a rolling boil. Put your live lobsters in one at a time using gloves or tongs. Do not cover. Allow lobsters to blanch by cooking them for 3 minutes. 


Remove lobsters and drain. If you enjoy the smokey bbq flavour, split the lobsters in half, lengthwise along their underside. Remove  the green tomalley as well as the red coral (black in the case of female lobsters) and set aside. 


Brush the lobster meat with olive oil, butter or your favourite bbq sauce, then place on medium-hot grill. Cook for approximately 8-10 minutes, brushing again midway through. 


While your lobster cooks, mix the green tomalley and coral with butter to make a delicious dipping sauce. Otherwise, discard. 


If you prefer a mild bbq taste, once you have blanched the lobsters, place them whole on a medium-hot grill. Cook for approximately 8-10 minutes, turning occasionally. Once cooked, split the lobsters in half, lengthwise along their underside. Remove the green tomalley as well as the red coral (black in the case of female lobsters) and set aside. Add desired flavouring (oil, butter or preferred sauce) directly to the hot lobster meat. 


Mix the green tomalley and coral with butter to make a delicious dipping sauce. Otherwise, discard.


Steam Live Lobster:


Add approximately 2 inches of water and a pinch of salt to a pot and bring to a boil. 

Place a steaming rack inside the pot (you don’t need to use one as long as you turn the lobster every few minutes). 


Once the water has reached a boil, add the lobster one at a time, head first into the pot and put the lid on. Steam 10 minutes for the first pound and 8 additional minutes for a second pound. If a lobster weighs 1.5 lbs, it would be steamed for 14 minutes. You can steam more than 1 lobster at a time as long as they aren’t crowded on the rack or in the pot.
